Ingredients:
Dough:
- 430g of flour
- 82g of corn meal
- 12g of salt
- 14g of sugar
- 8g of instant yeast
- in 300ml of water (at around 35C!)
- 56g of melted butter (use in mixing)
- Additional 50g of butter (use in external butter-ification process)
Sauce:
- 4 slices of bacon
- 56g of olive oil
- 1 onion
- 5 cloves of garlic
- 7g of red pepper flakes
- 800g tomatoes crushed
- pinch of sugar
- Oregano
- Salt (to taste)
"Toppings":
- Generic eastern european cheese.
Dvaro suris
is the brand i prefer. - Mozzarella
- Hard cheese, doesn't have to be fancy,
Dziugo suris
works here - Any form of stackable or sliced meat
Prep:
Dough
- Mix flour, corn meal, salt, sugar
- Dissolve yeast in water
- (gently) Melt 56g of butter
- Mix in together yeast water, dry ingredients, butter
- LET RISE FOR 1 hr or doubled
- punch the dough, roll out
- add in mixing butter
- roll dough up
- cut in half, form into spheres, back into bowls they go,
- let rest in fridge for one more hour
Pizza proper
- Take out the dough, add into pan, should be something inbetween a pizza dough and a pie dough.
- Line a baking dish with the dough
- Add in a base layer of toppings, starting off with the meat if you have it
- Pour in the souce
- Sprinkle hard cheese on top
- Bake for about 30 minutes on 180C, convection on if you have it
