Tofu and Egg Scramble

Ingredients:
- One slab of tofu (preferably smoked/marinated), bout 200-300g. worth.
- Four Eggs
- Spices:
- Garlic powder
- Smoked paprika
- Oregano
- Black pepper
- Any green alium for garnish
- Siracha
NOTE: this one scales easily with low time impact up to 3-4 people provided you use a bigger pan.
Prep:
- Prepare about a palm's worth of your spices of choice, the ones listed above work as a good base but you can add whatever you deem a good fit
- Slice up your green alium, set aside
- Crack and beat the eggs in a separate bowl, add in half of your spice mix.
- Add in the tofu into a pan, use a wooden or blunt spatula to break up into approx bite-size chunks.
- Pour in the eggs, turn the heat onto high
- scramble while adding your spicemix bit by bit.
- Pour in about a half a tablespoon's worth of siracha in
- Cook until mixture reaches desired consistency.
- Season with a sprinkle of salt, make sure to taste beforehand, as the siracha and possibly tofu marinate added it's own salt
- Plate up, the amount made will fit a 15cm plate well.
- Sprinkle on the alium
- Spray/pipe? a bit of siracha on top in lines as well for garnish
