Vegan tacos

Ingredients:

[Salsa]
[Pickled Onions]
- Potatoes
- Tofu, preferably firm and marinated
- Hummus
- Chopped peppers, any kind, pick according to desired spiceiness, of meatier kind
- Soft tortillas, I used wheat-based because we dont have corn-based tortillas in my town, but corn tortillas will work as well. Pay attention to labels when buying, some of them are made with animal fat.
Prep:
- Prep the pickled onions
- Preheat oven to around 175C
- Dice the potatoes and tofu, lay on a baking tray covered in oil, spice it up with whatever spices you deem well-fitting
- Bake the potato/tofu wombocombo for about 30 minutes.
- Prep the guacamole
- Prep the salsa
- NOTE: you'll have to take out/accomodate the potato/tofu tray while making the guac and salsa
- Plate it all up
- Assemble by spreading some guac and hummus, add in the potato/tofu mix, top with the onions, peppers and salsa, and enjoy.
