NOTE: requires an ice cream machine
Base ingredients:
- 470ml milk
- 235ml Heavy Cream
- 220g of granulated sugar
- A pinch of salt
Additions (Flavorings)
Coffee:
- To the base: add 150g of coffee beans
Vanilla:
- To the base: add some vanilla beans/base
Mango:
- To the base: add 70g Mango syrup
Cranberry:
- To the base: add 70g cranberry syrup
Custard ingredients:
- 235ml Heavy Cream
- 6 egg yolks
Prep:
- Throw all base ingredients AND the flavor addition into a medium sized pot, get it hot and steamy, do not boil, let steep for about 45 minutes
- After 40 minutes since base/flavor prep Prep an Ice bath, place bowl into Ice bath, add the Heavy cream into said bowl (from the Custard portion).
- Once steeping is complete, into a wholly separate bowl, add your 6 egg yolks
- Mix/break all the yolks into a consistent texture, ladel in the base ingredients into the yolk bowl, slowly.
- Once the eggs are warm add them back into the pot
- Keep the pot on heat, but do not boil, mix constantly until you see the custard thicken
- Once the mixture in the pot thickens, pour it through a mesh sieve into the heavy cream inside the ice bowl. Cool it down until it's cold
- At this point, mixture is ready, use the ice cream machine to churn it
