Key Lime Pie

NOTE: main change from source is adjusted ingredient values for a differently sized pie dish. You will likely have to adjust everything too.
Ingredients:
Crust:
- 120g melted butter
- 350g cookies, most kinds will work, aim for something darker, ginger, lemon flavors work well.
Filling:
- 2 cans of condensed milk
- juice of 6 limes (160ml~)
- 4 egg yolks
- zest of 4 limes
Prep:
- Heat oven to 175C
- melt the butter
- add the cookies to a processor; pulse until fine crumbs
- add the butter to the cookies
- dump the mix into a 9in pie dish and distribute, use a flat-bottom glass to get an even layer on the bottom, use your fingers to form the mix into desirable shape
- Bake crust for 10 mins at 175C
- While crust bakes; zest the limes, squeeze the juice out
- add the egg yolks and the zest into a bowl, whisk/beat for a minute
- pour in the condensed milk; incorporate, scrape down sides
- while mixing, pour in the lime juice
- pour into crust
- jiggle the whole dish around to get the poured mix flat
- bake pie at 175C for 20 minutes, let cool to about roomtemp and chill in fridge for 1hr
