Source: a fair few youtube tutorials, I can't recall which ones exactly

NOTE: I haven't managed to get them right even once, so this is not definitive, nor is it fleshed out, I still need to git gud.
Base Cookie Recipe:
- 100g egg whites
- 140g almond flour
- 90g granulated sugar
- 130g powder sugar
Add freeze-dried fruit, cocoa, or whatever else comes to mind.
NOTE: gauge the sweetness
Cooling period is between 45 mikes and 1 hr Bake for 16 to 22 minutes at 135 deg
NOTE: Cook one sheet at a time, using two sheets is too inconsistent.
Raspberry flavour
Cookie
- 241g powdered sugar
- 157g almond flour
- 26g of powdered raspberries
- 139g plain sugar
- 167g of egg whites
- pinch of salt
Ganache
- 100g white chocolate
- 30g heavy cream
- 50g raspbery puree (crushed raspberries)
Blueberry flavour
Cookie
- 241g powdered sugar
- 157g almond flour
- 26g of powdered blueberires
- 139g plain sugar
- 167g of egg whites
- pinch of salt
Ganache
- 100g of white chocolate
- 30g of heavy cream
- 50g of blueberry puree or blueberry uogiene liquid
Chocolate flavour
Cookie
- 240g powdered sugar
- 160g almond flour
- 40g cocoa powder
- 140g plain sugar
- 170g eggwhites
Ganache
- 100g dark chocolate up to 60%
- 30g heavy cream
