Ingredients:
Crust
- 240g flour
- 226g butter
- 100g sugar
- 1 egg yolk
- 6g vanilla extract
- 3g salt
Caramel
- 1 can of sweetened condensed milk
- 113g butter (cut into tbsp sized pieces)
- 200g light brown sugar
- 60ml golden or corn syrup
- 6g vanilla extract
- 3g salt
Chocolate Ganache
- 240g chocolate (semi-sweet)
- 80ml heavy cream
- optional pinch of sea salt
Prep:
- Preheat oven to 180 celsius
- line a baking dish with baking paper
Crust
- Cream the butter
- Add the sugar and salt
- Beat until light and fluffy
- Add vanilla and egg yolk
- mix until combined
- add flour in batches and mix until 'just' combined
- Transfer to pan and press into an even layer, bake at 180 celsius for about 22 minutes or until edges are golden
Caramel
- Combine the butter, brown sugar, salt, vanilla, sweetened condensed milk and syrup into a pot
- Place over medium heat and whisk until melted and combined
- Continue whisking over the heat while the caramel bubbles and darkens to a richer color.
- Once it reaches 107C, you'll see it starts to thicken. Let cool for 5-6 minutes
- Pour over the shortbread base, make it flat, chill in fridge for about 10 minutes
Chocolate Ganache
- Chop chocolate and melt with cream in a double boiler
- Pour the chocolate over the caramel and smooth into an even layer.
