Pancakes

Ingredients:
- 160g flour
- 1tbsp baking powder
- 2tbsp sugar
- 1tsp salt
- 240ml milk
- 1 egg
- 56g melted butter
- 2tsp vanilla
Vegan substitutions:
NOTE: at some point I had a craving for some pancakes but I realized that I didn't really want to buy an entire carton of milk and a bar of butter so..
- The milk can be directly substituted with oat milk and/or most plant-based milks
- The melted butter can be directly substituted with a neutral oil, though even olive oil worked.
- I will note that i did not try omitting the egg here.. but i have an inkling that it's just there to add richness.. perhaps it can be omitted as well?

Prep:
- Add everything into a single bowl, mix until homogenous, ensure that no flour clumps remain
- Cooking technique depends on what sort of look you want:
- You can get a nice, evenly browned texture by cooking without any oil/butter, BUT I am fairly certain that this requires a non-stick surface.
- Or if you want additional richness, a less uniform looking pancake you can cook on a layer of oil / butter.
- Cook on medium-high, for about 1-2 minutes per side.
NOTE: honestly, writing a guide on 'how to cook a pancake' so that you get it right on the first time is not really feasable. That is to say, you will have to learn the timing and the flipping techniques on your own with plain old practice. Do not feel discouraged if you fuck up a couple of them, getting the pan to the right temperature is tricky, and clean flipping is a skill all of it's own.
